UnChili-Cajun Powder or Monte's Chili Powder Base; Vers. 1.0.02 Beta Release

I use various types of chili peppers steeped in various types of vinegar to apply heat, some sourness, and/or liquid smoke, as needed.
I also love to use chipotle adobo. So my 'chili powder' has no chilies in it. 
If you are not much inclined to use fresh garlic when you cook, you may want to add more garlic powder.

All ingredients are finely ground dry powders.

1 Part Each: Cinnamon, Turmeric, Gumbo File, Celery Seed, Thyme, Greek Oregano, Black Pepper, White Pepper, Szechuan Pepper

3 Parts Each: Paprika, Fennel Seed, Garlic

4 Parts: Mexican Oregano

6 Parts: Cumin Seed

8 Parts: Coriander Seed

If only the coriander, cinnamon, celery, fennel, or cumin, is significantly more fresh than the others, use less. 
Using more of a significantly more stale ingredient is unlikely to help much.

Future editions may contain: Powders of Onion, Mushroom, Chipotle, Mustard, or Tomato.
